was distilled from GuideLive's Top 100 list, available at
www.guidelive.com.
Both lists represent some of Dallas' most enduring restaurants,
as well as those on the cutting edge. They recognize leaders
in ethnic cuisines as well as regional fare and home-style
cooking.
Restaurant critic Dotty Griffith selected the Top 50 for
this publication. The contributors include former restaurant
critic Waltrina Stovall, Todd Epperson, Teresa Gubbins,
Kim Harwell, Kim Pierce, Nancy Schaadt and Lawson Taitte.
The numbers at the end of each description note the month
and year of the critic's review. At some restaurants, menus
have changed since our last visit.
ABACUS *****
The most informal of our five-star restaurants, Kent Rathbun's
place maintains an extraordinary level of food & service.
Sushi and sashimi are fresh and beautifully designed. Recent
menu additions include grilled pork tenderloin with corn
sauté, served with apple-smoked twice-baked potato;
and sumac-crusted duck breast with curried lentils, carrot
sauce and cucumber raita. Incredible desserts. Stylish but

AL BIERNAT'S
**** Mr. Biernat has never lost the charm he honed during
his 22 years as maitre d' and general manager at The Palm.
Now, he treats customers right at his own upscale restaurant.
Winning appetizer: smoked N Atlantic salmon. Outstanding
salads, incl namesake Al's w hearts of palm, avocado shrimp
& crab. The beef showpiece of the moment is a Kobe-style
steak ($52) that's a cross between the Wagyu and Black Angus

**** "One world" cuisine is still tops at this
trendy spot across from Bass Hall. If anything, chef Clark
McDaniel only becomes more inventive, building on Angeluna
classics such as the grilled rib eye, the Thai rice noodles
and the giant calamari appetizer. Appetizers are a stimulating
crop, with witty international notes. Gourmet pizzas please
thin-crust fans. Delightful desserts. Professional service;

**** Once the sleek Baby Routh, the building has been transformed
into a Sardinian village piazza with exterior stucco, interior
marble and red roof tiles. Some of the best pasta in the

**** One of the longest-running restaurant shows in Dallas
reopened in '01 with a new look, the same feel and a menu
that bridges traditional and contemporary culinary styles.

One would be hard-pressed to find a better meal when chef-owner

offers attentive service in an upscale setting. Fish is

Veracruz (seared grouper in a broth of leeks, tomatoes,
